So far I’ve shared Chicken Recipes for Big Families and Beef Recipes for Big Families; today let’s talk about Breakfast Recipes for Big Families here at The Littlest Way. Of the three posts, this one with breakfast recipes for big families might just be my favorite!

I love LOVE love breakfast. Love it. If I had the choice of going out to dinner or breakfast, I would almost always choose breakfast. That being said, I’m not a big fan of cooking a big breakfast early in the morning…so God in His wonderful sense of humor blessed me with seven children who all need to be fed, first thing in the morning…good one God!

Sometimes, since I love breakfast so much, but don’t care for the early part, I will make a big breakfast for our dinner. So, use these breakfast recipes for big families I’m sharing in the morning or the evening.

Also, because of the “first thing in the morning,” I’m including a fair share of casseroles in my breakfast recipes for big families. They can be made the night before or even on the weekend and then popped in the oven first thing in the morning…easy peasy.

Breakfast Recipes for Big Families

"Recipes

1. Breakfast Hash

You cannot go wrong with a breakfast hash. Here is a recipe from A Simple Pantry, but really, you don’t need a recipe for a breakfast hash. Use what you have. This makes it economical and family-friendly…don’t like onions, leave them out…don’t have cilantro, switch up the ingredients and make this to suit what you do have. Serve a breakfast hash with some fresh or frozen fruit or a fruit smoothie and you are on your way to a great day.

2. Pecan Streusel Coffee Cake

You know from my last two Recipes for Big Families how much I love Briana Thomas’
Trim Healthy Mama "" recipes. (By the way, if you have wanted to learn more about Trim Healthy Mama "" but didn’t want to spend $30 for a book, their new book just came out and it is only $14 Buy it with their new Trim Healthy Mama Cookbook: Eat Up and Slim Down with More Than 350 Healthy Recipes"" and you end up getting two great books for the original price of one!) But back to this recipe. A yummy, sweet breakfast casserole served with some fluffy scrambled eggs and crisp bacon…Delicious and filling for a big family! Your children will wonder what the special occasion is.

3. Overnight Baked Oatmeal Trim Healthy Mama Style

Oatmeal, a large family’s friend in the kitchen. It’s inexpensive and adaptable. It can be used to make a delicious Baked Oatmeal in the morning and then added to make a moist meatloaf later in the day…and don’t forget oatmeal cookies or cowboy cookies for a snack. I love the ease and convenience of baked oatmeal. And it is so adaptable; add blueberries, peaches, strawberries, raisins, butter, syrup (the last two will make this off plan for
Trim Healthy Mama "")

4. Crustless Quiche

I love quiches or casseroles over oatmeal; they are so savory and yummy. Depending on the meat and seasonings used, your casserole can have a Mexican, Italian or American flair. Another benefit, when you make one, make two or three. Put one in the oven and freeze the others. The night before you want to eat a warm, hearty, yummy breakfast casserole, pull it out of the freezer and into the fridge. The next morning bake per the directions.

5. Sausage Egg and Cheese Casserole

Another super simple breakfast casserole recipe. To make this
Trim Healthy Mama "" friendly, just omit the bread. It’s still yummy. You can also sub bacon or ham for the sausage.

6. Grab ‘n Go Freezer Egg McMuffin Sandwiches

You know those mornings when the soccer games start at 8am? So you have to be at the field at 7 or 7:30? Skip the expensive drive-thru! Make these delicious breakfast sandwiches up some weekend and freeze them. They are the perfect “Grab and Go” breakfast when you’re rushing out the door…or after having a new baby when your hands are full, your brain is mush and you are sleep.deprived.

7. Baked Pancakes

Love pancakes but hate standing over the
griddle flipping pancake after pancake? Here’s your answer! Baked Pancakes. These are easy to make, feed a crowd and satisfy your pancake cravings…win–win–win!

8. German Oven Pancakes

Speaking of pancakes…we call this a “Puffy Oven Pancake” but it’s the same recipe. Yummy! Few ingredients and short on time? This is recipe will help you out! Serve with some fruit or yogurt and you are good to go.

9. Buttermilk Blueberry Breakfast Cake

Yes, please! Eating this makes me feel like I’m having cake for breakfast. This is a great birthday breakfast dish. Serve with scrambled eggs and bacon…yummy!

10. Oven Baked Hotel Eggs

Sometimes I just do not have enough room on my stovetop for a big skillet full of scrambled eggs. Hotel Eggs to the rescue! These are baked in the oven, freeing up valuable stove burner real estate. Scrambled eggs go with anything from sweet to savory. Eggs are inexpensive, filling and a good source of protein; perfect for big families.

11. Bagel Sandwiches

Do not underestimate the easy…Do think outside the box.
Bagel sandwiches for breakfasts? You better believe it! If it makes you feel better, place a fried egg on these delicious bagels. I prefer laying out the “lunch” items and letting the children make their own.

12. Biscuits and Gravy

My husband’s favorite breakfast. It took me years to learn how to make the perfect gravy; the secret, take it off heat just before it’s done. I always overcooked mine! Not anymore. And the biscuits, you can buy canned ones or make your own. I checked out this book at the library years ago and can make the “perfect” biscuit in minimal time,
Biscuit Bliss: 101 Foolproof Recipes for Fresh and Fluffy Biscuits in Just Minutes"".

13. Crockpot Breakfast Casserole

Three of my favorite words when taking food, Crockpot…Breakfast…Casserole. I love these Crockpot casseroles the morning of special occasions like Easter or Christmas. I know we’ll get off to a good start before consuming lots of holiday treats and how easy is this–wake up…eat.

14. Classic French Toast

French Toast will forever make me think of my sweet mother in love. We would stop by sometimes after Church and she would get up and start fixing us breakfast while we chatted and watched the little girls dance to Polka music. Those Sunday breakfasts usually included white bread French Toast, barely done scrambled eggs and bacon cooked in the microwave…and it was some of the best breakfasts I have ever eaten.

15. Boiled Eggs

I do not like Boiled Eggs…my family loves them! Boiled Eggs make a great breakfast for big families because they are so convenient. Boil a large number of eggs early in the week and keep them in the fridge for quick breakfasts.

16. French Toast Casserole

Just like the pancakes, if you do not want to stand over the griddle flipping pieces of toast, then a French Toast Casserole is the answer. Again, serve this with some crisp bacon…Mmmmm!

17. Mini Frittata Brunch Bar

I am TOTALLY doing this! This is a great idea, kid-friendly, family-friendly (same thing?) economical base of eggs…AND…you can freeze the leftovers. Pop ’em in a freezer bag and pull out as needed. Brilliant!

18. Freezer Breakfast Burritos

Another brilliant idea and this one from Money Saving Mom. Make a batch of these up some weekend and pull out of the freezer as needed. These are perfect for our recipes for big families because they are so ingredient flexible…add what you like and leave out what you don’t like.

19. Skillet Granola

I had no idea I’ve been using this recipe since 2009. This is an Ann Voskamp recipe she posted way back when…before she became “The Ann Voskamp.” This makes a lot! Perfect for cereal with milk, add it to yogurt or make granola bars with it.

20. Cereal with Milk

Yes, there are those days or seasons where a cheap bag of store-bought cereal and a gallon of milk (or two depending on family size) is good enough.

"Breakfast
