Do I have a recipe for you! Goodness this is delicious comfort food. I have been off the Trim Healthy Mama wagon basically since December and I am feeling it. My blood sugar is all wonky, my sleep is interrupted, my skin is dry and my skirts which were lose–now fit. I needed this reminder as to why I started Trim Healthy Mama
in the first place. Back to this recipe…I’m going to file this under my large family recipes because this recipe can be easily doubled, is inexpensive and maybe?? maybe could even be cooked in the crockpot?
Large Family Recipes: Cauliflower Hash
My friend Rebecca made a gluten free/dairy free scalloped potatoes for our Shrove Tuesday Party and we loved it. It was warm, satisfying comfort food at it’s finest; but potatoes do a number on my blood sugar, thus are a no-no on Trim Healthy Mama. But Scalloped Potatoes you guys! Oh, in addition to the potatoes, I think dairy may be the source of my stomach/side pain and discomfort. This is a hard one because I LOVE cheese. But I love feeling good more. Anyway, I called Rebecca the other day and we figured out a way to make this Trim Healthy Mama friendly. Rebecca is gluten and dairy free so that part of the recipe didn’t need to be tweaked.
I made this the other night but instead of hamburger, I used Venison and it was so yummy. Serve with a salad and it’s still a perfect S meal following Trim Healthy Mama, add some rolls or buttered bread for the kids and it’s a great meal for the whole family.

I, too, am gf-df… one trick with cauliflower that I recently discovered and would be helpful in this recipe: put raw cauliflower in a blender with water, pulse until chopped, and drain in a fine mesh colander. The blender does a great job of chopping the cauliflower evenly, the water helps keep the cauliflower chunks moving around the blender blades, and best of all, I’m not finding bits of cauliflower all over the counter as a result of my dubious cutting skills. If you blend and pulse cooked cauliflower you’ll end up with a mash. Thanks for the recipe!
